Carolyn M. Pancake

Carolyn M. Pancake, 75, of Kissimmee, FL passed away on February 16, 2025. She was born August 29, 1949 to Cecil and Betty (Claytor) Grigsby in Wood River, IL. Carolyn was a homemaker. She was affectionately called Mimi by those who loved her. She enjoyed sewing and quilting. Carolyn was passionate about her family and Jesus which was demonstrated in the many ways she gave of her time, talents and money! Because she cared, she served. She travelled the world with her husband, Bill of 57 years and took every grandchild on a trip. Her hospitality and cooking were unmatched. No one left Mimi’s home hungry or without feeling God’s love. Carolyn is survived by her loving family; husband, Bill Pancake of Kissimmee, FL; daughters, Laura M. (Vance) Moody of Kissimmee, FL, Cindy L. (Todd) Gray of Bell FL; sons, Scott (Pamela) Pancake of Chuluota, FL, Brian (Jennifer) Pancake of St. Cloud, FL, Matthew L. (Gina) Pancake of Kissimmee, FL; sisters, Janet K. (Gene) Hawkins of Toledo, OH, Brenda S. (Ronald) Vernelson of Kissimmee, FL, Cissy (Bill) Padgett of Soldotna, AK and her brother, Greg (Cindy) Grigsby of Meridian, ID. She is also survived by 20 grandchildren and 19 great grandchildren. The family will receive friends on Friday February 21, 2025 from Five O’clock PM - Seven O’clock PM at Life Church 2269 Partin Settlement Road, Kissimmee, FL 34744. A Celebration of Life Service will be conducted on Saturday February 22, 2025 beginning at Two O’clock PM also at Life Church with Pastor Jamie Stewart, Pastor Greg Grigsby, Pastor Wayne Brooks and Pastor Jonathan Gallo officiating.
