Carol C. Stephens, 87, of Celebration, FL passed away on December 17, 2024. She was born on December 11, 1937, to Lewis and Josephine (Burke) Carter in East Orange, NJ. Carol is survived by her loving family, sons, James R. Stephens, Jr. of Baltimore, MD, Matthew T. (Kristin) Stephens of Ocean Springs, MS, Andrew P. (Michelle) Stephens of Huntington Beach, CA, Timothy J. (Michele) Stephens of Morgantown, WV; Daughter, Kristin A. (Jim) Driscoll of Holmdel, NJ. and seven grandchildren who lovingly called her Mimi: Kiera, Taegen, Rylie, Casey, Kailee, Connor and Colton, and her wonderful grandson in law Frank Nicolosi and soon to be grandson in law Mason Hooper. She is also survived by her brother, John Burke Carter and sister-in-law Gail of Little Egg Harbor, NJ She is predeceased by her loving Husband James R Stephens and brother Lewis Carter. After living 55 years in Hazlet NJ, Mimi moved to Celebration, FL three years ago, to join her granddaughter Kiera in a place she loved. Mimi loved to tend to her beautiful new home, and gardens and take year-round walks through Celebration exploring her beautiful new town. Mimi was an adventurous traveler visiting her family around the country and vacationing around the world joining family in Japan, Ireland, London, Paris and cruising through Alaska. She was an avid reader who loved to visit Celebration Library. She had a true love of music and dance, especially The Nutcracker where over the course of her life Mimi watched her daughter Kristin and later her granddaughters Casey and Kailee dance. She never missed a performance. Her family and friends will always remember her enthusiasm, passion for life and endless positivity to her family and friends. The family will receive friends on Friday December 20, 2024, from 5 o'clock to 8 o'clock PM in the chapel of Osceola Memory Gardens Kissimmee. The Mass of Christian Burial will be celebrated at 11:00 AM on Saturday December 21, 2024, at Corpus Christi Catholic Church 1050 Celebration Avenue, Celebration, FL 34747.
